What can we expect from the new Botanica menu?
Everything I do at MKC is 100 percent plant-based, always. Botanica will offer an à la carte menu along with a chef's tasting menu, which will highlight smaller growths of vegetables that have a shorter season, as well as incorporating some of the key dishes from the main menu.

What are some of the benefits of a plant-based diet?
A plant-based diet is not about restriction, that is the most common misconception I hear. Rather, it is about abundance, creativity and innovation. From an environmental standpoint, it is the most sustainable option. If everyone would at least reduce their consumption of animal products, we would have a planet for much, much longer. From a health and physical standpoint, it’s easy to digest, packed with nutrients, and when done properly will leave you feeling better than any other way of eating can. However, I am not one to try to convert others, I simply aim to create spaces where people can enjoy excellent food that also happens to be plant-based.

How would you describe your cooking style in three to five words?
Simple, innovative, vibrant, seasonal, and a little bit playful.

You’re a busy man, with a slew of restaurant openings slated around the world this year – what sets Botanica apart?
For one, the location. There is nothing like it. Related to that, we are using local ingredients and have created a menu that pays homage to the traditional cuisine of the Maldives. While we have included some of our classics, almost all of the menu is unique to this location, and it’s a very exciting assortment.

And, lastly, we hope you find a quiet moment or two here at One&Only Reethi Rah – how do you plan to relax while on the island?
Being away from the hustle and bustle of Los Angeles gives me space to clear my head and think about our business, what’s next, and how we can have the biggest impact possible. I suppose you could say I plan to work, but at the same time it’s what I love most. Of course, I’m also looking forward to getting in some physical activity, exploring the island, and catching up with friends.
